Description

A relative of the sunflower, Jerusalem Artichoke 'Fuseau' is a very hardy perennial vegetable that is a cinch to grow, producing high yields of sweet and nutty tubers over the winter when crops are sparse.

The nutritious tubers are rich in iron, have a lovely, creamy texture and can be treated in the same way as potatoes or parsnips. They make delicious soup, and are excellent roasted, sautéed or fried. Jerusalem Artichoke 'Fuseau' is much smoother and thinner skinned than other varieties, making it easier to peel. Plants are self-perpetuating, with new tubers growing every year. A tall crop, it makes an excellent windbreak for the allotment. Height: 3m (10ft). Spread: 1m (39in).

How to Grow

Grow Jerusalem artichokes in moist but well drained soil in a position with some shade. Plant tubers from late winter to mid-spring. Plant horizontally 10-15cm deep, 30cm apart, in rows 90cm apart. When stems reach 30cm high earth them up. In mid-summer, cut back plants to 1.5-2m to concentrate energy in the developing tubers. Remove any flower buds and support plants with stakes. Cut down to 7.5cm when leaves wither in late autumn. Harvest from late October and throughout the winter months as required. Flavour improves  after a frost. Save a few good quality tubers for replanting.
